(Sayadieh) Lebanese Fish and Rice

Ingredients

2 pound(s) White fish, Haddock, Tilapia or Cod
2 large Onions , slice thinly.
2 cup(s) Basmati Rice, I prefer basmati rice, which is available at most supermarkets, however long-grain white rice can be substituted.
1/2 teaspoon(s) Ground Cumin
1/2 teaspoon(s) Ground Coriander
1/2 teaspoon(s) Black Pepper
1/2 teaspoon(s) Turmeric, you may also use saffron if you have it on hand.
1/2 teaspoon(s) Salt
1/2 cup(s) Vegetable oil
4 cup(s) Water

Directions

Season and fry your fish until golden brown on each side. Set aside.
Rinse the rice, add cumin, coriander, and turmeric.
In a dutch oven place the sauted onions in the bottom. Then layer your fish on top of the onions. Next you will add your rice on top of the fish.
Pour your water over the rice being careful not to let the fish rise to the top.
Bring to a boil, turn the heat down and simmer until the rice is cooked through.
Let cool for about 5 minutes, then you can turn your pot over onto a serving tray. You will see the onions on top. You may also garnish with fried onions or almonds.
